Coupons and An Abundance of Food!

Today Shop and Save was having a “stock up” sale on miscellaneous Pillsbury products. I don’t buy many convenience foods, but their crescent rolls are my weakness. I had a ton of Pillsbury coupons lying around so I went for it. Pillsbury crescent rolls, pizza crusts, French bread, Italian bread, and breadsticks are on sale this week 10/$20. If you get 10, you get $3 off their purchase according to their ad. (The gal wouldn’t take my printed copy, but she did run over and get the ad at the front of the store). I also had a bunch of manufacturers coupons, so my products came down to about $1.45 each. Not too shabby.

Unfortunately, I’ve been drinking milk like crazy so I bought a gallon… and it’s $3.19 at Shop and Save. Ouch! At Aldi it’s only $2.89 on a bad day. Oh well…

I have a lot of food around so I’m trying to eat all my leftovers before making something new.  Tonight I’m going to use my leftover chicken and some awesome mango ginger chutney from Trader Joe’s (thanks boss!) to make some sort of mango ginger chicken and rice. I don’t know exactly how I’ll do it, but that’s how I usually cook anyway. I have leftover lentil rice casserole, leftover lasagna (I think like 3 servings–my sister made it for us last week!), and frozen leftover beef stroganoff. Thursday I will probably make pasta fagioli from a recipe on Allrecipes and I’ll make some crescent rolls or something to go with. Mmmm.

Gotta figure out what to make for me and my sister Friday. I’m seriously considering pancakes and bacon. I have nice bacon around right now, too. Mmmmmm.

Leftovers I really need to eat: Chicken, lentil rice casserole, lasagna.

Frozen stuff: Beef stroganoff, plenty of bones for chicken stock, ham for pasta fagioli, chicken stock, veggies, and muffin batter.

Projected meals:

  • Today–mango ginger chicken.
  • Wednesday–leftovers: probably lentil casserole for lunch and either mango ginger chicken or lasagna for dinner.
  • Thursday–lasagna for lunch, pasta fagioli for dinner.
  • Friday–more lasagna for lunch, pancakes and bacon for dinner.
  • Saturday–any leftovers for lunch and dinner.

I think Sunday might just be pork roast day. Hooray!
