What’s For Dinner? Pt. 22: Goat Cheese and Tomato Tricolor Pasta

Whew, I’ve been running all day! Busybusybusy! I’m definitely tired and I know this will be a very taxing weekend. I’m excited, but also nervous. I am going to need lots of energy and some quick dinners to eat, so I made scallop corn chowder Monday and I have three servings left. It’s delicious and will make a great lunch and/or quick dinner.

Today I got home late but did get a chance to go to the farmers’ market, so I got some marinated goat cheese with extra virgin olive oil, pepper, tomatoes, and herbs. Mmmm. I also got two tomatoes. I boiled some nice, salty water for the rest of my tricolor eliche, made the pasta, drizzled the pasta with olive oil, and added the goat cheese and tomato. A second tomato and more goat cheese is now in the fridge for tomorrow’s lunch. 

Yum yum! I also got some big roasting peppers and more apples. I’m making cookies tonight to stash at work and I will be eating apples till they come out of my ears. I also tried a delicious peach chutney but I can’t afford a big jar so maybe next week. I’d like to stock up on jams and chutneys for winter. Also squash. I need to make my butternut squash soup.
